The recipe is not at all clear to me, how much lime pickle do I add to how much mayo?

Had to dig up my old print copy to find the lime pickle mayo recipe. Make 1 recipe of the Mayonnaise (Melissa Clark’s) that’s on this app (which yields 1 cup if you’re using store bought) then stir in 2 Tbsp finely chopped lime pickle. This is one of my favorite potato salad recipes of all time!

This has been our interesting-ready-for-a-change-from-regular-potato-salad go-to for some time. LOVE the balance of flavors. Lime pickle is easy to find in our local grocery store (Kroger-owned). I tend to increase the cilantro and nuts. Excellent in a Nicoise variation with paired with a curried tuna salad using candied ginger and pecans.

I just made this. More depth than you'd think with a few ingredients. I used Pakak's Lime Pickle. It reminds me of preserved lemon I had growing up in Hawaii Thank you reader Julija for posting the mayo recipe. I used a scant cup of Trader Joe's mayo. I'd prolly use even less mayo for the 1.3 lb Sweet Diane potato I got from Berkeley Bowl. Looking forward to tomorrow when the flavors come together. Next time, I'll try a combination of mayo and yogurt for more tang, and more cashews.

We didn't have lime pickles so we used hot sweet pickles & a whole lime (chopped flesh and zest) and sumac- fantastic!

Just made for the second time with 1 tbsp chopped lime pickle and 5 tbsp Hellmans mayonnaise. It’s absolutely delicious. Served with a simplified version of Melissa Clark’s Gingery Griiled Chicken Thighs (ie no peaches and omitted basting step but used all ingredients in marinade) and a green salad. Dinner guests devoured!

Using other ingredients as stand-ins for lime pickle -- like lime and jalapeno? Consider sumac!

We enjoyed this as a side for paneer kabobs (Meera Sodha recipe) and improvised the lime-pickle mayonnaise with a mix of Hellman’s & Greek yogurt (about 1/2 cup total) and about 2T purchased, finely chopped lime pickle, which was about the right spiciness for us. (Ashoka brand, quite intense) Lots of flavor, minimal prep.

Substituted preserved lemon peel and sweet/spicy jalepenos for the lime pickle, and shallots for the scallions... and it was still delicious!

A super delicious alternative to your standard church picnic potato salad. Exotic enough to be interesting, but not too scary for your mother-in-law. I used about a cup of Duke’s and maybe 3 tbs. of Patak’s Hot Lime Pickle. Has to run it through the food processor to get rid of the big chunks. I also added extra lime juice for more brightness. Might add a touch of agave or pomegranate molasses for a bit more sweetness next time too. Paired great with grilled jerk chicken!

This was very simple to make but lacks some major ingredients to make it worth cooking. Decided to add some of my own additions like chopped pickle and paprika to give it some substance.

This is a great twist on potato salad! There are also a lot of ways to go with the idea of sweet potato salad. My favorite version involves lime juice, chilies and andouille sausage, scallions, cilantro, lemon thyme, and dill. It has the bite that the lime pickle introduces, is great for lunches and is easy to make larger batches of. You could easily leave out the sausage include something else (couch, all the chilies, cough) for the bite.

I got the Priya lime pickle. I wanted to like this. I SO wanted to like this. But for whatever reason it just tasted like plastic to me. My hubby thought it was okay but definitely not a keeper.

Delicious as written! Easiest for me to order the lime-pickle off of Amazon. Having loved this recipe, I substituted low-fat Greek yogurt for the mayo try to rehabilitate the dish as a healthy lunch to pack for work, and it worked just OK -- the mayonnaise really is more delicious. (Darn!)

Doubled the recipe.Roasted the sweet potato chunks. 350 for about 20 minutes. Lightly oiled them first.Used Priya Citrus Pickle with garlic and olive oil. Local Indian grocery recommended this brand. (there are many types of lime and/or citrus pickle - some sweet, not what you want.) This one has complex flavors and is very spicy. For double recipe I backed down the proportions a bit and used ½ cup eggless mayo and about 3 teaspoons of citrus pickle. Huge hit with book group!
